2 cups strawberries, diced
1 t. granulated sugar
12 ounces plain non fat Greek yogurt
6 ounces low fat cream cheese, room temperature
1 t. vanilla bean paste, or vanilla extract
1/2 cup powdered sugar
1 T. strawberry shortcake vodka (optional)
Methods:
- In a small bowl mix the diced strawberries and teaspoon of sugar, place in the fridge to macerate and chill.
- In the bowl of a stand mixer add the room temperature cream cheese and beat for several minutes until fluffy.
- Add the Greek yogurt, vanilla, powdered sugar, and vodka to the cream cheese and beat on medium speed until the mixture is smooth and creamy.
- In 4 martini glasses, layer the strawberries and cheesecake, ending with the strawberries on top.
- Chill in the fridge for at least 30 minutes
