 Ingredients: 

1 fully baked potato
A handful of cheese (grated)
A tiny bit of butter
1 egg
A handful of chopped onion
Any other fillings you might want, e.g: cooked meats (roughly chopped), sweetcorn, spring onion etc
Black pepper to season


  1. Preheat oven to 180oC and line a baking tray with aluminium foil.
  2. Take the fully baked potato and scoop out some of the insides. Don’t scoop it all out – make sure there’s a fair layer of potato still there.
  3. Take the butter and spread around the inside of the potato (if it’s just been cooked the heat from the potato should melt the butter itself)
  4. Put half the grated cheese in the potato and all the chopped onion
  5. Put in the chopped meat/sweetcorn/any other fillings.
  6. Sprinkle the rest of the grated cheese on top, making sure there is enough space left to hold the egg
  7. Crack the egg into a bowl first. You don’t want to crack it straight onto the potato in case there isn’t enough room.
  8. Put as much egg as can fit into the top of the potato.
  9. Sprinkle with black pepper to season
  10. Place potato on baking tray and bake in oven for 15-25 minutes depending on how well you want your egg done.
