2 cups strawberries, diced
1 t. granulated sugar
12 ounces plain non fat Greek yogurt
6 ounces low fat cream cheese, room temperature
1 t. vanilla bean paste, or vanilla extract
1/2 cup powdered sugar
1 T. strawberry shortcake vodka (optional)

  1. In a small bowl mix the diced strawberries and teaspoon of sugar, place in the fridge to macerate and chill.
  2. In the bowl of a stand mixer add the room temperature cream cheese and beat for several minutes until fluffy.
  3. Add the Greek yogurt, vanilla, powdered sugar, and vodka to the cream cheese and beat on medium speed until the mixture is smooth and creamy.
  4. In 4 martini glasses, layer the strawberries and cheesecake, ending with the strawberries on top.
  5. Chill in the fridge for at least 30 minutes
